Stuffed Apple Pie Cupcakes Recipe

When someone says dessert, one of the first items that comes to mind is apple pie, and for good reason!  It’s a damn American treasure.

The only problem with apple pie is that it’s sort of a pain to make…

Enter these apple pie cupcakes!  This cupcake starts with our favorite vanilla cupcake, but then it gets filled with apple pie filling and topped with a kick ass cinnamon buttercream.

It’s… literally… the perfect combination of tastes.

Eating this cupcake is like sitting in front of a warm fire with a big plaid blanket wrapped around your shoulders…..oh, and fuzzy kitty slippers on your feet as well!

You can’t create these perfect apple pie cupcakes, without a perfect foundation, and that foundation cupcake is a tiny punch of bliss right to your taste buds.

I used to be a huge fan of box cake mix.  And in a pinch, I still am all about a quick solution to a last-minute problem.  BUT….adding a 10-minute prep time to collect all of the ingredients makes a GINORMOUS difference in taste.

The awesome thing about a basic cupcake recipe is that everyone almost always has the basic ingredients in their pantry.

Some tips for success in making the Simple Sweet Vanilla Cupcake:

  • The batter for this cupcake is very thin….but do not fret little one! This is the consistency that is expected and these little treats will be light and fluffy once you pull them out of the oven.
  • As in all my recipes, I encourage using a hand mixer as compared to a stand mixer. This provides you more control of the blending and helps to incorporate all of the ingredients evenly.
  • Fill the cupcake liners only halfway to prevent overflowing.

The Cinnamon Buttercream Frosting

Buttercream frosting is another basic staple in a baker’s arsenal.  The great thing is, like our Simple Sweet Vanilla cupcake, you can customize the flavors as you wish.

For this recipe, we wanted to add some cinnamon to play off the Apple Pie filling we’re stuffing inside the cupcake….go big or go home.

Since I’m amongst friends here, I’m going to honestly tell you I didn’t measure out the specific amount of cinnamon I used.  I used a…..LOT of cinnamon.

This is where tasting is important!  The frosting should have a light tan color with flecks of cinnamon throughout, with a delightful cinnamon bite on your tongue when you shove the beater into your mouth.

Apple Pie Filling

apple pie cupcakesOnce your sweet little treats cool, you can carefully remove the centers with a butter knife.  You can even use a piping tip as well!  Be careful with a knife as always…we don’t need any Urgent Care visits for the sake of some pastries.

The apple pie filling that we used was actually from a homemade jar that was given to us by my mother-in-law.  If you’re a fan of canning, you can always use a basic apple pie recipe as the filling.

Or if you are looking for a quick solution, I’m sure apple pie filling in a can from the baking section would work just as well.

Finishing the Apple Pie Cupcakes

We get fancy over here with our decorating and used a Wilton’s 1M tip to pipe up on the cinnamon buttercream frosting.

Invest in good pastry bags.  This really goes a long way with making the frosting process pleasant.  Ziploc bags and tape are only going to make you angry and cause you to start throwing/breaking things….it’s not worth it.

Simple Sweet Vanilla Cupcake

  • 2 1/2 cups AP flour
  • 2 cups sugar
  • 3 tsp. baking power
  • 1 tsp. salt
  • 1 cup milk
  • 1/2 cup vegetable oil
  • 1 Tbsp. vanilla extract
  • 2 eggs
  • 1 cup water

Cinnamon Buttercream Frosting

  • 4 cups powdered sugar
  • 1 cup butter, softened
  • 3 tsp. vanilla
  • 1-2 Tbsp. milk
  • 2 Tbsp. cinnamon

Apple Pie Filling

  • 1 can apple pie filling *Or homemade if you're feeling fancy*


Simple Sweet Vanilla Cupcake

  1. Preheat oven to 350 degrees F and prepare your cupcake pan with liners.
  2. Add the dry ingredients (salt, sugar, baking powder, flour) to a large bowl and combine.
  3. Add the wet ingredients (milk, vegetable oil, vanilla extract, eggs) to a separate bowl and combine.
  4. Add the wet ingredients to the dry ingredients and beat with a hand mixer until combined.
  5. Slowly combined the water with the mixed batter until well combined.  The batter will be very thin, do not fret!
  6. Fill the liners about halfway and bake in your preheated oven for 15-17 minutes (or until a toothpick comes out clean from the center of your treats).
  7. Allow the cupcakes to cool for 2 minutes in the cupcake pan before moving to a wire rack to completely cool and enjoy <3

Apple Pie Filling

  1. Take a butter knife and carefull remove a small cavity from the center of the cooled cupakes.
  2. Add a spoonful of the apple pie filling to each cupcake.
  3. Don't be embarassed to enjoy the centers you pulled out of the cupakes....we don't judge 🙂

Cinnamon Buttercream Frosting

  1. Mix the softened butter and vanilla extract with a hand mixer until well combined.
  2. Slowly add the powdered sugar to the creamed butter and mix on low until incorporated, and then increase the mixer speed to a medium-high speed.
  3. Add milk one tablespoon at a time until the frosting reaches the perfect consistency for either piping or spreading. 
  4. Add the cinnamon to the buttercream frosting and enjoy <3
