Yaaaassss, it’s time for another chocolate cupcake variation.  Dim the lights, get some wine, turn on some soft music, and get ready to learn about the sassy chocolate covered strawberry cupcake.

As you can tell, we love our foundation chocolate cupcake recipe.  We’ve used it before, and will continue to use it for many recipes to come!

Sure, sure… You probably have your favorite chocolate cupcake recipe.  I’m sure it’s good, it’s just… this one is better!   😉

I kid, but I would say if you haven’t tried our favorite chocolate cupcake recipe…you should give it a shot!

The sassy chocolate covered strawberry cupcake is like one of those really good movies with 2 leading roles.  You never knew it was possible to have your heart pulled in two directions, but here we are.

You’re going to be in love with the cupcake and the buttercream.  Don’t fight it, just let your taste buds dance in to this symphony of deliciousness. (heavy breathing)

The Strawberry Buttercream Frosting

Typical buttercream is just powdered sugar, heavy whipping cream, and softened butter.  It’s super easy to make and requires only a tiny bit of moisture.

The strawberry buttercream isn’t much different but, instead of adding in whipping cream, you’ll use fresh strawberries and their natural juice.

I was nervous that I wouldn’t have enough moisture, but it’s perfect.  You could probably add in a touch more powdered sugar if you want a thicker frosting.

I personally like the texture this buttercream recipe produces, but feel free to tinker!  Just remember, a little goes a LONG way.  You won’t want to add too much powdered sugar, or too many strawberries to change the consistency.

My favorite part of this strawberry buttercream is just how much fresh strawberry flavor comes out in every bite.  Some buttercream frostings have that sugary flavor, these certainly don’t.  The fresh strawberry flavor is soooo good!

When you combine this fresh strawberry buttercream with a chocolate cupcake… whoa.  Freaking. Amazing!

If you end up making too much buttercream, you can freeze it!  It’ll last about 3-4 months in an air tight container.

When you are ready to use the leftovers, just leave it in the refrigerator over night to unthaw.

Strawberry Buttercream Tips:

  • FINELY chop your fresh strawberries. Take the time to make sure your strawberries are very finely chopped and you capture the juice as well.
  • Don’t try to use a mixer to chop your strawberries. If they become too much like a puree, your buttercream will turn out very thin.
  • Leave the stand mixer in the pantry. A hand mixer will allow you to incorporate your ingredients really well. It produces the most amazing texture too!
  • Eat a spoonful or two of the frosting. Quality control is important, and this incredible responsibility falls onto the baker’s shoulders.

Ingredients

The Most Amazing Chocolate Cupcake

  • 1 cup all-purpose flour
  • 1 cup sugar
  • 6 T cocoa powder
  • 1 t baking soda
  • 1/2 t salt
  • 1 egg
  • 1/2 cup buttermilk
  • 1/2 cup vegetable oil
  • 3/4 t vanilla
  • 1/2 cup hot water

Sassy Strawberry Buttercream Frosting

  • 8 T butter, softened OR 1 stick
  • 4 cups confectioner's sugar
  • 1/2 cup fresh strawberries, finely chopped (with juice)

Instructions

The Most Amazing Chocolate Cupcake

  1. Preheat your oven to 300 degrees!
  2. Combine all of the dry ingredients in a large bowl by whisking together.
  3. Combine the egg, buttermilk, vegetable oil, and vanilla in a medium sized bowl and set aside.
  4. The wet and dry ingredients are going to get married now in a beautiful ceremony with a hand mixer!
  5. Add the water to the batter and mix together. Batter will be thin, do not fret!
  6. Fill your liners in your cupcake pan with the batter, filling each liner about halfway.
  7. Bake these little cuties for 18-23 minutes, or until a toothpick comes out clean when inserted in the middle!
  8. Remove the cupcakes from the oven and allow to cool in their pans for 2 minutes. Then, remove the cupcakes from the pan and allow to cool on a wire rack until ready to frost.

Sassy Strawberry Buttercream Frosting

  1. Cream the softened butter in a large bowl with an electric hand mixer.
  2. Alternate adding in the strawberries and powdered sugar until combined on low speed.
  3. Add more strawberries if the frosting seems too dry. Add more confectioner's sugar if the frosting seems too thin. ENJOY <3
