Ingredients

  • 1 cup all-purpose flour
  • 1 cup sugar
  • 6 T cocoa powder
  • 1 t baking soda
  • 1/2 t salt
  • 1 egg
  • 1/2 cup buttermilk
  • 1/2 cup vegetable oil
  • 3/4 t vanilla
  • 1/2 cup hot water

  • 1 1/2 cups butter, softened OR 3 sticks
  • 1 cup cocoa powder
  • 5 cups confectioner's sugar
  • 1/2 cup milk
  • 2 t vanilla

Instructions

The Most Amazing Chocolate Cupcake

  1. Preheat your oven to 300 degrees!
  2. Combine all of the dry ingredients in a large bowl by whisking together.
  3. Combine the egg, buttermilk, vegetable oil, and vanilla in a medium sized bowl and set aside.
  4. The wet and dry ingredients are going to get married now in a beautiful ceremony with a hand mixer!
  5. Add the water to the batter and mix together.  Batter will be thin, do not fret!
  6. Fill your liners in your cupcake pan with the batter, filling each liner about halfway.
  7. Bake these little cuties for 18-23 minutes, or until a toothpick comes out clean when inserted in the middle!
  8. Remove the cupcakes from the oven and allow to cool in their pans for 2 minutes.  Then, remove the cupcakes from the pan and allow to cool on a wire rack until ready to frost.

The Most Amazing Chocolate Buttercream Frosting

  1. Measure the cocoa powder into a large bowl.  Run a whisk through the powder to break up any clumps.
  2. Add softened butter to the bowl and cream together until well-combined with a hand-mixer.  The texture and consistency is MUCH better with a hand mixer (as compared to a stand mixer).  
  3. Alternate adding the confectioner's sugar and the milk to the creamed mixture.  You can achieve this by adding 1 cup of confectioner's sugar followed by 1 tablespoon of milk, turning your hand mixer onto high for about one minute after each addition.  Repeat this process until all of the confectioner's sugar and butter has been added.
  4. Add the vanilla to the mixture and combined well.
  5. For a frosting that is too dry, add milk 1 Tablespoon at a time until you achieve the right consistency.  If the frosting seeems too runny, add a bit more confectioner's sugar until you achieve the most AMAZING frosting result :)
