Ingredients

Simple Sweet Vanilla Cupcake

  • 2 1/2 cups AP flour
  • 2 cups sugar
  • 3 tsp. baking power
  • 1 tsp. salt
  • 1 cup milk
  • 1/2 cup vegetable oil
  • 1 Tbsp. vanilla extract
  • 2 eggs
  • 1 cup water

Cinnamon Buttercream Frosting

  • 4 cups powdered sugar
  • 1 cup butter, softened
  • 3 tsp. vanilla
  • 1-2 Tbsp. milk
  • 2 Tbsp. cinnamon

Apple Pie Filling

  • 1 can apple pie filling *Or homemade if you're feeling fancy*

Instructions

Simple Sweet Vanilla Cupcake

  1. Preheat oven to 350 degrees F and prepare your cupcake pan with liners.
  2. Add the dry ingredients (salt, sugar, baking powder, flour) to a large bowl and combine.
  3. Add the wet ingredients (milk, vegetable oil, vanilla extract, eggs) to a separate bowl and combine.
  4. Add the wet ingredients to the dry ingredients and beat with a hand mixer until combined.
  5. Slowly combined the water with the mixed batter until well combined.  The batter will be very thin, do not fret!
  6. Fill the liners about halfway and bake in your preheated oven for 15-17 minutes (or until a toothpick comes out clean from the center of your treats).
  7. Allow the cupcakes to cool for 2 minutes in the cupcake pan before moving to a wire rack to completely cool and enjoy <3

Apple Pie Filling

  1. Take a butter knife and carefull remove a small cavity from the center of the cooled cupakes.
  2. Add a spoonful of the apple pie filling to each cupcake.
  3. Don't be embarassed to enjoy the centers you pulled out of the cupakes....we don't judge :)

Cinnamon Buttercream Frosting

  1. Mix the softened butter and vanilla extract with a hand mixer until well combined.
  2. Slowly add the powdered sugar to the creamed butter and mix on low until incorporated, and then increase the mixer speed to a medium-high speed.
  3. Add milk one tablespoon at a time until the frosting reaches the perfect consistency for either piping or spreading. 
  4. Add the cinnamon to the buttercream frosting and enjoy <3
